Spiced Pork Meatballs on Pineapple

Another funny name for them : "Galloping horses" :)

1/2 ripe pineapple

For the topping:
10 oz lean pork, such as tenderloini or centercut boneles chops
canola oil
2 cloves garlic, minced
2 shallots, minced
1 tbs minced fresh ginger
1-4 jalapeno or other hot chilies, seeded and minced
3 tbs finely chopped fresh cilantro
2 tbs packed brown sugar
2 tbs soy sauce

1. Peel and core the pineapple. Cut the pineapple crosswise into 1/2-inch-thick rings, and cut each slice into 6-8 wedges. Arrange the pineapple pieces on a serving plate
2. Grind pork, garlic, shallots, ginger, chilies. Mix with chopped cilantro, sugar, soy sauce and form the meatballs.
3. Heat the oil in a wok and fry the meatballs in batches. Drain them on paper towels, let cool.
4. Put meatballs on top of pineapple wedges and secure them with skewers.
Garnish with cilantro sprigs
